Okay so I know with this title I have big shoes to fill, but not gonna lie I feel pretty confident in this one. Disclaimer; I am sure this recipe is already out there in some way shape or form, but hey, this is my version and I still feel like it’s worth sharing. We all love a good pancake and we all love making our favorite things healthy, right? Well at least sometimes. And in this case the healthy version hits different and I would say even better than the real deal. So here goes, here’s my not so infamous healthy pancake recipe. Pro tip — enjoy on Friday’s so you can look forward to “Pancake Friday’s” every week 😉
What You’ll Need (1 serving)
- ½ very ripe banana
- 1 egg
- 30 g oat flour —
- store bought is ideal for this recipe because it is finely ground, but homemade can work too, so work with what you’ve got on hand sis
- Lots of cinnamon
- 1 tbsp almond milk —
- play around with the consistency here; thicker pancakes = less milk, thinner pancakes = more milk
- Add ins of choice —
- my favorites are dark chocolate chips and organic blueberries, get wild blueberries if you can *iykyk*
Directions
- Spray medium sized pan with olive oil and place over medium heat
- Blend all ingredients together (minus add ins)
- If you do not have a blender —
- Mash banana with a fork
- Whisk egg into mashed banana
- Add in remaining ingredients (minus add ins)
- Pour batter onto pan making 3 pancakes using the majority of the batter
- Place add ins onto each pancake
- Use remaining batter to cover add ins to avoid them sticking to pan once flipped
- After 3-4 minutes, flip pancakes
- Cook for additional 3-4 minutes, then remove from pan
- Serve with Earth Balance vegan butter, raw organic honey, and fresh fruit as a bonus
